2 lbs spinach

1/4 C parsley

1/4 C basil

3 T olive oil

2 cloves garlic crushed

6 eggs

1/2 C chopped mushrooms

1/4 C whole plain yogurt

1/3 C grated manchego cheese

1/4 t black pepper fresh ground

1/2 t real salt

In a food processor with regular cutting blade, add spinach, herbs, salt and pepper. Drizzle 2 T olive oil into food processor as you process all ingredients. Saute mushrooms in olive oil. Meanwhile, heat oven to 400. Beat eggs, add yogurt and vegetable, herb mixture, mix thoroughly. Coat pan with oil, add mixture to cast iron or other pan, heat on medium flame on stove until edges turn brown 10-15 minutes, add cheese, place in oven about 10 min. to complete cooking.

Cut and serve from pan immediately. You can purchase spinach, parsley, basil, mushrooms, cheese, and eggs at the markets.
