This recipe is simple and quick and so delicious!

Cut up any vegetables

carrots
potatoes
eggplant
broccoli
garlic
onion
peppers
squash
beets

Put vegetables in a baking dish to broil or grill. Add olive oil to coat all vegetables,  sea salt and fresh black pepper. If placing in oven preheat oven to 425 add vegetables when oven is up to temperature and bake at high heat for 30 minutes stirring occasionally. If grilling vegetables coat with oil and place on grill turning periodically. Grill for 10-15 minutes. don’t overcook crunchy vegetables are so much tastier than mushy ones.
