Ingredients

3 ears corn uncooked shucked

1 1/2 cups buttermilk

1/2 cup basil

3 scallions or sweet onion roughly chopped

1 large garlic clove roughly chopped

3/4 teaspoon sea salt

1 Tablespoon fresh lime juice or more to taste

Preparation

Add corn to blender, should be about 3 – 3 1/2 cups, blend, add all other ingredients plus 1/3 cup of ice to blender and puree till smooth. Strain and serve with a drizzle of olive oil and sliced radishes as garnish.

Sweet corn, basil, garlic, scallions and onions, radishes are all available at the markets.
