2 cups arugula, torn

2 cups butter leaf lettuce, torn

2 ripe nectarines

1/4 cup roasted walnuts or other of your choice

 

Dressing

3 tablespoons raspberry vinegar or cider vinegar

1 teaspoon dijon mustard

5 tablespoons olive oil

pinch of sugar, salt and pepper

 

Combine dressing ingredients and mix well. Arrange salad and pour dressing over salad. Sprinkle with walnuts and serve immediately.

Serves 4-6
