3 cups sliced cucumbers

1/4 walla walla sweet onions sliced

1/2 red bell pepper, sliced

1/2 t real salt

1/4 t sugar

2 t white wine or cider vinegar

Dressing

1/2 t grated fresh ginger

1 t soy sauce or Dr. Braggs

1/4 t sugar

1 Tablespoon cider vinegar

2 T olive oil

1/4 t red chile pepper flakes

 

Place cucumbers, peppers and onions in a bowl with salt, sugar and vinegar. Let stand 15-30 minutes. Meanwhile, combine dressing ingredients. Drain cucumbers and toss with dressing. Season with salt and pepper, serve immediately or chilled.

You can purchase cucumbers, onions, and bell peppers at the markets.
